Very old vines over 100 years old, standing straight, pre-phylloxera, from the Aldeanueva del Codonal and Aldehuela areas, grown in glass.
The Verdejo of Segovia is different from Rueda due to the acid and granite character of the soils.
It is harvested by hand in boxes of 20 kg capacity.
When the grapes arrives at the winery, you pass a double selection table for bunches and whole grapes.
Only the flower must is used for this wine as it has a not very high turbidity and is of great quality. A contribution of quality wood is sought that gives the wine greater packaging, more depth, but that eminently respects the character.
Tasting notes: The wine obtained has a dense, long and tasty mouth. Its natural acidity, thanks to the altitude of the farms (some at 900 meters), ensures a good evolution in the bottle.

Food Pairing: This wine pairs well with fish in sauce, white meat, roast lamb, cheeses, grilled vegetables and legumes.
