Tasting Notes:
Greenish yellow wine. On the nose it has a marked varietal aroma of Verdejo with a medium intensity, notes of fennel, fine herbs, white flowers, pear and peach. On the palate it is fatty, fresh, very unctuous and with a long and round finish. Good acidity together with a period of aging on its finest lees, will keep it fresh over time and retain all its aromatic complexity.
It is a wine that does not seek so much explosiveness on the nose, but rather a more varietal, elegant and complex character. They are wines that can be consumed even after 24-30 months from the harvest.
Aging on lees for at least 6 months, 50% in stainless steel, 5% in 6,000-liter French oak casks or in larger capacity wooden barrels, called fudres.
Best served at between 8º and 10ºC
Food pairing: This wine pairs well with fish, seafood, white meat, ham, pasta, chicken and cold cuts.
