Description
Vintage characteristics: Winter and spring were rainy and temperatures somewhat lower than average, which caused a delay of about 10 days in sprouting. The rainy season lasted until the end of June and then there was one of the driest cycles in memory, the rains did not arrive until the end of September.
Elaboration: After a short maceration, the yolk must is obtained by static bleeding, it proceeds to settling and then ferments in stainless steel tanks between 16-18ºC to obtain the maximum aromatic expression of this variety.
