GEOLOGY AND SOIL
Clay-calcareous tertiary terraces, on the slopes of the Montes Obarenes and Sierra Cantabria.
ELABORATION
Fermentation with indigenous yeast in oak tanks. Aged for 28 months in barrels made from selected oak trees in our cooperage. Prior to bottling, a clarification is carried out with fresh egg white. Once in the bottle, it will undergo a refining process for at least twelve months in our cellar.
TASTING
We have a cherry red wine, with a high layer and very good density. On the nose you can find hints of ripe red fruits, spices (pepper) and undergrowth; In turn, the whole range of coffee aromas stand out: caramel coffee with milk, roasted coffee, … With a well-integrated wood. On the palate it is silky, with a tannin present, denoting youth and good aging potential. With a tannic structure that makes it elegant and balanced. Pairing We can pair it with red meat, lamb and grilled rock fish.
