Description
Harvest and selection of vineyards: First harvest at Finca Las Amedias, located in Rueda, 770 m. Tall. and during the night. The bunches are selected in each plot, ensuring the optimum moment of maturity for this short-cycle, early-ripening variety.
Elaboration and fermentation: Very slow vinification in concrete, lightly toasted wood foudres and stainless steel. At controlled temperatures of 16ºC, which are then adjusted to 14ºC for the development of thiolic aromas. Small micro-oxygenation and contact with lees until bottling, in order to increase volume and creaminess. Possibility of aging in the bottle itself.
Tasting notes: Low intensity greenish yellow color. Aromas of cut grass, citrus and exotic fruits such as lychee or passion fruit. In the mouth it is fresh, balanced and with presence of acidity. In retronasal citrus and herbal notes appear again.
Pairing food: Faithful companion of fish, seafood, sushi and steamed vegetables.
Best between 7ºC and 9ºC.
