A white wine, with a certain weight in the mouth and a touch of Cadiz grace
Well yes, we are nonconformists and shamelessly daring. Although historically in Rueda, oxidative aging Verdejos have been made, we have dared with a biological aging process, why not? The result has been a white wine with a nose that does not hide its 10 months in the barrel and that has weight on the palate and brings out some of that pungent Cadiz grace that we like so much. Do not miss it, it is a carnival.
Maceration in tank. Fermented and aged in Jerez boots. Biological aging in part of the wine for a minimum of 10 months.
Jerez casks have previously been used for a year for the biological aging of Sherry wines. Once emptied, without washing them, they were transported directly to our Rueda winery in order to maintain the presence of the veil that was perfectly implanted in our Verdejo wine.
The mineral-saline character that the soils give it and the maritime influence of the veil stand out.
Lovely straw yellow color. Aromas of ripe fruits, dried fruits, and white flowers with salty touches. In the mouth it is structured but fatty and fresh, with a mineral aftertaste that invites you to repeat.
Sea stews, ham, rice and fish.
