Description
Harvest: First harvest at Finca las Amedias, Rueda, at an altitude of 700 meters and during the night, to avoid premature fermentation and oxygenation. In each plot the bunches are selected manually, ensuring the optimum moment of maturity.
Winemaking: Fermentative maceration for 10 hours at 6ºC in an inert atmosphere. Alcoholic fermentation at 16ºC in concrete tulips and racked in barrels with their lees in suspension by means of batonage once a week. 8 months of aging in new French and Hungarian oak barrels.
Tasting notes: Greenish yellow color, of medium intensity, clean and frank, bright and with the presence of tears. Intense and rich aroma, with the presence of citrus and balsamic such as sandalwood and mint. On a secondary level, aromas of white chocolate and bakery stand out. On the palate it is unctuous, with fresh and creamy acidity. In the aftertaste, citrus fruits combined with spices such as white pepper return.
Food Pairing: Good combination with pasta, risotto and fatty fish.
Best served between 11ºC and 13ºC
